So, one thing I noticed with yesterday’s bread is that the dough didn’t rise as much as I expected. It did rise, but just…I thought it would be more. But still, tasty bread.
This morning as I am putting together the new batch, I go to dissolve the yeast and the recipe just says to dissolve in 1 1/4 cups of warm water. The *packet* says dissolve with a teaspoon of sugar.
Wait, what now? I don’t recall ever putting sugar in with the yeast. Like, ever… I mean, it’s been a while since I baked, but I think I’d remember that.
So, I toss in a teaspoon of raw sugar, wait 10 minutes, and oh my, the bubbles.
The dough is on the first rise. It’s still got 35 minutes to go, but I am SO interested to see what happens.
